In Dutch oven mix together sugar, cornstarch, cinnamon, nutmeg and salt.
Add water and cook until thickened, stir frequently.
Pack lemon soaked apples in hot jars
Fill with syrup, remove air bubbles & put on hot lids.
Place in water bath canner, bring to boil & process 20 minutes (quarts)
May pressure can at 5lbs for 10 minutes.
