Elsie’s Potato Soup

This recipe of Gramdma's makes a creamy and flavorful soup, loaded with chewy dumplings. I prefer to use my homemade turkey stock in place of the water.

  • Prep: 15 hrs

Ingredients

1 celery stalk, finely diced

1 onion, finely diced

1 lrg carrot, finely diced

2-3 potatoes

milk

flour

butter

For dumplings

1 c flour

1 1/4 tsp. baking powder

3/4 tsp. salt

1/4 tsp. pepper

1 tbsp. butter

3/4 c. milk

1 egg, beaten

Directions

Soup

1Add celery, onion and carrot to dutch oven, just cover with water and simmer 20 mins

2In the meantime peel potatoes and cube, add to pot and cook 10 mins

3Add milk to cover (may add little more milk and thicken with flour & water slurry)

4Put in big chunks of butter

Dumplings

1Mix: flour, baking powder and salt

2Add: butter and mix with fork

3Add: milk and eggs

4Mix together and drop by spoonful into soup, simmer
