Jean’s Easy Shrimp Gumbo

1 tbsp. EVOO (extra virgin olive oil)

1/2 lb. mild Italian sausage, ground or casings removed

1 lrg onion, chopped

1 sweet pepper, chopped

2 ribs celery, sliced thin

3 cloves garlic, chopped

2 14.5 oz cans stewed tomatoes

1 14.5 oz can chicken broth (or 1 pint of Loma's homemade turkey stock)

1 tsp paprika

1 tsp salt

1/4 tsp pepper

1/4 tsp cayenne

1 lb med. shrimp

1 c quick rice

parsley for garnish


1Heat EVOO over med-high, add sausage and break up.

2Add onion, pepper and celery - cook 8 mins.

3Add garlic, tomatoes, broth and seasonings - cook 15-20 mins.

4Add shrimp cook 3-4 minutes.

5Stir in rice, cover and remove from heat. Let stand 5 mins.
