Steak Chili

This is a unique twist on chili, and yes, it is made without beans. If you feel you must add beans, please add them at the end, so they do not soak up the spices intended for the meat.

Loma's steak chili recipe

Ingredients

2 tbsp. EVOO (extra virgin olive oil)

3 lbs. steak of your choosing, cubed small (can substitute roast meat)

Salt/Pepper

1 16oz bottle of beer, (I recommend our Wisconsin made, Leinenkugel Red)

2 cups water

1/2 cup dried chili powder

4 garlic cloves, finely minced

1 large onion, finely diced or pureed in food processor

1 1/2 tsp. ground oregano

1 tsp. paprika

2 tsp. kosher salt

2 tbsp. ground cumin

1 tsp. cayenne pepper (optional or to taste)

1 quart fire-roasted tomatoes

10 oz. tomato puree

Garnish

sour cream

cheddar cheese, shredded

Fritos

Directions

1Season steak with salt and pepper

2Brown steak in Dutch Oven with EVOO

3Add remainder of the ingredients

4Bring to boil, reduce to simmer for 2 hours

Garnish

1With sour cream, shredded cheddar cheese, diced onions and Fritos
