Uncle Andy’s Macaroni & Cheese

Another classic from Grandma's recipe collection. She credits her brother-in-law, Andy Bertha, as her source for this recipe. This is a quick & easy recipe to make for a family dinner and pairs perfectly with meatloaf.
1Melt butter over medium heat, add flour whisk for 2-3 min.
2Gradually stir in milk. Cook 3 to 5 min. or until thickened, stir frequently.
3Add mozzarella cheese.
4Add Velveeta; cook 3 min. or until melted, stirring frequently.
1Layer in greased casserole pan (or oven-safe individual bowls) half of macaroni noodles, cheese sauce, cheddar & Colby cheeses.
3Bake 350° for 30-35 minutes until golden brown.

• Add 1/2 tsp. dry mustard and pinch of salt with flour for a flavor boost.
• Toss bread crumbs with melted butter and spread on top to add a bit of crunch.
• Substitute part (or all) of the pasta with cauliflower and zucchini to reduce the carbs.
