Another classic from Grandma's recipe collection. She credits her brother-in-law, Andy Bertha, as her source for this recipe. This is a quick & easy recipe to make for a family dinner and pairs perfectly with meatloaf.

1 box elbow macaroni - cooked as directed

3 tbsp. butter

3 tbsp. flour

1 1/2 c. milk

1 c. mozzarella cheese

2" chunk of Velveeta cheese - cubed

1 c. Colby cheese

1 c. cheddar cheese

1Melt butter over medium heat, add flour whisk for 2-3 min.

2Gradually stir in milk. Cook 3 to 5 min. or until thickened, stir frequently.

3Add mozzarella cheese.

4Add Velveeta; cook 3 min. or until melted, stirring frequently.

1Layer in greased casserole pan (or oven-safe individual bowls) half of macaroni noodles, cheese sauce, cheddar & Colby cheeses.

2Repeat layers.

3Bake 350° for 30-35 minutes until golden brown.

Add in ideas from FoodFamilyLove:
• Add 1/2 tsp. dry mustard and pinch of salt with flour for a flavor boost.
• Toss bread crumbs with melted butter and spread on top to add a bit of crunch.
• Substitute part (or all) of the pasta with cauliflower and zucchini to reduce the carbs.

Still use the same recipe with slight twist: a combination of mozzarella, Gouda, Colby and cheddar cheese. No bread crumbs…bake and then stick under broiler till bubbly and slightly brown!

Still make this recipe with a slight twist: a combination of mozzarella, Gouda, and cheddar cheese! No bread crumbs on top, just bake and then broil till the top is bubbly and slightly brown and crisp!
