Elsie’s Potato Soup

Yields1 Serving
 1 celery stalk, finely diced
 1 onion, finely diced
 1 lrg carrot, finely diced
 2-3 potatoes
 milk
 flour
 butter
For dumplings
 1 c flour
 1 1/4 tsp. baking powder
 3/4 tsp. salt
 1/4 tsp. pepper
 1 tbsp. butter
 3/4 c. milk
 1 egg, beaten
 
Soup
1

Add celery, onion and carrot to dutch oven, just cover with water and simmer 20 mins

In the meantime peel potatoes and cube, add to pot and cook 10 mins

Add milk to cover (may add little more milk and thicken with flour & water slurry)

Put in big chunks of butter

Dumplings

Mix: flour, baking powder and salt

Add: butter and mix with fork

Add: milk and eggs

Mix together and drop by spoonful into soup, simmer
