Uncle Andy’s Macaroni & Cheese

 1 box elbow macaroni - cooked as directed
 3 tbsp. butter
 3 tbsp. flour
 1 1/2 c. milk
 1 c. mozzarella cheese
 2" chunk of Velveeta cheese - cubed
 1 c. Colby cheese
 1 c. cheddar cheese
Sauce

Melt butter over medium heat, add flour whisk for 2-3 min.

Gradually stir in milk. Cook 3 to 5 min. or until thickened, stir frequently.

Add mozzarella cheese.

Add Velveeta; cook 3 min. or until melted, stirring frequently.

Assembly

Layer in greased casserole pan (or oven-safe individual bowls) half of macaroni noodles, cheese sauce, cheddar & Colby cheeses.

Repeat layers.

Bake 350° for 30-35 minutes until golden brown.

Add in ideas from FoodFamilyLove:
• Add 1/2 tsp. dry mustard and pinch of salt with flour for a flavor boost.
• Toss bread crumbs with melted butter and spread on top to add a bit of crunch.
• Substitute part (or all) of the pasta with cauliflower and zucchini to reduce the carbs.
