Elsie’s Pumpkin Pie (a.k.a Libby’s)

As I was collecting recipes from Grandma Elsie I, of course, had to ask for her pumpkin pie recipe. Because as many of you remember Grandma always had several pumpkin pies at our Thanksgiving gatherings along with her Famous Cheesecake. So, our conversation went something like this… Loma, “Gram can I have your pumpkin pie recipe?” and she replies, “honey, it’s on the can!” Well, who knew?

But, what some of you may or may not realize, is she always made her pies fresh, early on Thanksgiving morning.
She truly was amazing!

Spinach Lasagna Roll-ups

This is a great pot luck dish, it is easy to make ahead of time and freezes well. I recommend serving with garlic bread, Caesar salad and a Loma sized glass of red wine.

Steak Chili

This is a unique twist on chili, and yes, it is made without beans. If you feel you must add beans, please add them at the end, so they do not soak up the spices intended for the meat.

Buttermilk Ranch Dressing

I’m not sure who was the originator of this buttermilk dressing recipe, maybe Aunt Loma Gereau-Carlson or Aunt Lola Schafer. What I do remember is this was my dad, Pug Steinhoff’s favorite salad dressing recipe and was always a staple in our refrigerator while growing up. He would put in on everything including potatoes and fish. I would be remiss if I didn’t mention the he was a bit particular about making it only with Jilbert’s Dairy Buttermilk. This is the perfect dressing to pour over some sliced cucumbers and onions.
